Crab Stuffed Flounder

Step 1: Preheat oven 375 F. Step 2: In a med sauce pan add 1 tbsp olive oil and heat to med heat. Add in ½ c. chopped onions until they begin to sweat down and even start to caramelize then add 2 cloves minced garlic. Add 1 c. crab meat, 2 tbsp cream cheese, ½ tsp old bay seasoning, salt and pepper and 2 tbsp garlic chives finely chopped and stir until well incorporated. Remove from heat and allow to cool. Step 3: Spread on a thick layer of crab meat mixture on to each fish fillet and spread until it is even. Step 4: Roll up each fish fillet and lay with seam side down on a greased baking pan. Shrimp Creole Bruschetta

1) In a medium bowl combine, 1 c chopped pimiento-stuffed green olives, 1 (7oz) jar roasted red peppers, drained and chopped, 1/4 c extra light olive oil, 3 tbsp red wine vinegar, 2 tbsp capers, 2 tbsp chopped fresh parsley, 1 tsp minced garlic, and 1/4 tsp black pepper; cover, and refrigerate. 2) In a med bowl, combine 24 peeled and deveined shrimp and 2 tsp Creole seasoning; toss gently to coat shrimp. 3) In lg skillet, heat 2 tbsp olive oil over med-high heat. Cook shrimp for 1 to 2 min on each side, or until shrimp are firm and pink. Spoon about 1 tbsp of mixture on top toasted French bread rounds. Place shrimp on top of mixture.

Clams Casino

Little neck clams shucked (for easier shucking, steam clams over simmering water for two minutes or just until their shells barely open. Run a knife or small screwdriver around a shell's edge, and pop it open) fill with (sautéed peppers, onions, bacon), garlic, panko bread crumbs, and Parmesan cheese. Preheat oven to 375 degrees. Boil 10 ounces elbow macaroni in salted water until tender, drain well in colander, then return to pot and set aside. Melt 3 tbsp butter over med heat in a lg saucepan. Add1/4 c flour and whisk until smooth. Continue stirring butter and flour mixture over med heat for 2 min until it lightly browned. Slowly pour in 2 c milk or half and half while whisking and whisk until smooth. Cook while stirring constantly for 2-3 minutes until mixture thickens. Add 1/2 tsp salt, 1/4 tsp pepper, and a pinch of Old Bay seasoning. Add 4 oz cream cheese and whisk until smooth. Remove from heat and add 6 oz grated cheddar and 6 oz Monterey jack cheese. Salmon and Asparagus Salad

Heat gas or charcoal grill. In small bowl, mix 1/3 c. Maple syrup, 2 tbsp Dijon mustard and 2 tbsp olive oil with wire whisk. Cut salmon crosswise into 4 pieces. Brush salmon with 1 tbsp of the dressing. In large bowl, toss asparagus and 1 tbsp of the dressing. Place asparagus in grill basket (grill “wok”). Cook asparagus 7 to 10 minutes and salmon 10 to 15 minutes, until asparagus is crisp-tender and salmon flakes easily with fork. Divide salad greens, carrots and hard cooked eggs. Top with salmon and asparagus. Sprinkle with pepper. Serve with remaining dressing.
