Spinach and Smoked Salmon Salad with Lemon-Dill Dressing
In a large bowl, whisk 3 tbsp extra-virgin olive oil with 2 tbsp fresh lemon juice and 2 tbsp chopped dill and season with salt and pepper. Add 8 cups baby spinach, 6 oz smoked salmon, cucumber, radishes and scallions to the bowl and toss well. Transfer the salad to plates and serve.
