N'Awlins-Style Rice with Shrimp and Sausage

Place 2 tbsp McCormick® Mixed Pickling Spice in the center of a piece of cheesecloth or coffee filter. Tie tightly with long piece of string. Cook and stir 1 pound smoked sausage or andouille sausage, cut into 1/2-inch pieces, 1/2 cup chopped celery, 1/2 cup chopped onion and 1/2 cup chopped green pepper in large heavy skillet on medium-high heat about 5 minutes or until sausage begins to brown. Add 1/2 tsp crushed red pepper, 1/2 tsp thyme leaves, 1 c. long grain rice and pickling spice bundle. Pour in 3 c. chicken broth. Bring to boil. Reduce heat to low; cover and simmer 20 minutes. Stir in 1 pound medium shrimp, peeled and deveined and 2 cans (14 1/2 ounces each) diced tomatoes, undrained. Cover and cook on medium heat 6 to 7 minutes or just until shrimp turn pink. Remove pickling spice bundle before serving.
