Air Fryer Teriyaki Salmon Bites
Teriyaki Marinade/Glaze:
3 tablespoons teriyaki sauce NOT glaze
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 tablespoon olive oil
2 tablespoons light brown sugar packed
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1 teaspoon cornstarch + 3 tablespoons cold water
cooking spray
Instructions:
In a shallow dish, whisk the teriyaki sauce, soy sauce, apple cider vinegar, olive oil, brown sugar, garlic powder and ground ginger until combined and the sugar dissolved.
Transfer 1/3 cup of this marinade mixture to a small saucepan (this will be your glaze).
Remove skin from salmon. Cut salmon into bite-sized pieces (about 1″ squares) then add salmon cubes to the marinade, turning to coat. Marinate salmon 15-20 minutes (not longer than 20 minutes).
Preheat the air fryer to 400 degrees. Lightly spray the air fryer basket with cooking spray then add salmon bites in a single layer (shaking gently to remove excess marinade).
Air fry salmon 4-5 minutes or until cooked through to an internal temp of 145° on an instant read thermometer and lightly browned (turn halfway through cooking time).
NOTE: cooking time will vary with the exact size of the salmon bites.
Remove salmon bites from the air fryer and drizzle the glaze over the top. Serve with rice and your favorite vegetables OR with toothpicks as a light appetizer.
Teriyaki Glaze:
While the salmon is cooking bring the marinade in the saucepan to a boil then reduce the heat to low.
In a small bowl whisk the cornstarch and water together then add to the marinade stirring over low heat until it’s combined and thickened. If it’s too thick, another tablespoon of water or to your desired consistency.
