  • 1 min read

Ingredients

  • 1 lb fresh, skinless white fish fillets (like cod or halibut), patted dry

  • 1/2 cup finely ground almonds, toasted to golden perfection

  • 2 tbsp rich extra virgin olive oil

  • 1 tbsp fresh lemon juice, bright and tangy

  • 1/2 tsp sea salt, finely crushed

  • 1/4 tsp finely ground black pepper, aromatic and pungent

  • 1 tbsp fresh parsley, finely chopped for a burst of color

Instructions

  1. Preheat your oven to 375°F (190°C), ensuring it’s fully heated for even cooking.

  2. In a small bowl, mix the toasted ground almonds, olive oil, lemon juice, sea salt, and black pepper until well combined.

  3. Place the fish fillets on a lightly greased baking sheet, spacing them evenly.

  4. Generously spoon the almond mixture over each fillet, pressing lightly to adhere.

  5. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the fish flakes easily with a fork.

  6. Remove from the oven and let rest for 2 minutes before serving.
