Grilled Scallops

1 pound large sea scallops patted dry

2 tablespoons olive oil

Salt to taste

Pepper to taste

1 lemon cut into wedges


Preheat grill to medium-high heat.

In a bowl, toss scallops with olive oil, salt, and pepper and lemon juice.

Grill scallops for 2-3 minutes per side, or until opaque and slightly firm.

Remove scallops from the grill and let rest for a few minutes.

Serve with a squeeze of lemon.


Notes:

Pat the scallops dry before grilling to ensure a nice sear.

Preheat the grill to medium-high heat for even cooking.

Don't overcrowd the grill; leave space between the scallops for even cooking.

Grill the scallops for 2-3 minutes per side, or until opaque and slightly firm.

Let the scallops rest for a few minutes before serving to help them retain their juices.
