Seared COD with Tomato-Caper Sauce
Heat olive oil in a large non-stick pan and over medium heat. Add 2 garlic cloves, sliced and cook until it releases its aroma, about 1 minute. Add 1 - ½ cup grape tomatoes, halved and cook stirring occasionally for 4-5 minutes. Stir in 1 tbsp capers (rinsed). Season 1 - 1½ pounds cod, cut into 2 inches fillets with salt and pepper on one side and add to the pan with tomato-caper sauce. Cook cod for 4 minutes on each side or until done. Remove from the heat and enjoy with mashed potatoes, rice or pasta!
